A tried-and-trusted Waitrose favourite that pulls off a difficult trick: it's a faithful rendition of the traditional slightly rustic qualities of Cahors while reining in the pulverising tannins that sometimes let the side down in that corner of southwest France. Plummy fruit, dense but not too dense, this is one for a herby sausage casserole
