The Cellar and the Chai.
Anxious to combine tradition with progress, we have recently modernised the chais, which now include a vat-room completely equipped in stainless steel, with adjustable temperature controls.

The barrel depot holds nearly 800 casks, one-third of which are replaced every year.

Maturing lasts 12-18 months in barrels, large tuns or vats.
The casks are exclusively in French oak, from the Allier department, and Jean-Luc Baldès has developed close relations with the coopers, who have now become his partners in producing exactly the kind of casks he requires.
After bottling, our wines are laid down for six months before being put on sale. |
